I just discovered your website a few days ago, and am finding it a treasure trove of information as I plan our trip to Tuscany and the Cinque Terre in late September!
We are looking specifically to spend a few days attending a wood fired oven cooking school, possibly even at a location in the countryside that would host us overnight as well. Do you have any recommendations or resources? Thank you

For anything regarding planning you trip just ask!
As far as a wood fired oven cooking school or course, I think the best thing is actually to stay at some nice farmhouse in the countryside that offers cooking classes.
Here are some options I recommend, where a wood fired oven is used to cook typical Tuscan dishes:
–Azienda Agricola Campriano, typical tuscan farm with pool producing wine and olive oil. It is located in the heart of Chianti, near the village of Greve in Chianti. Here info on their cooking classes.
–Montelucci Farmhouse de charme. Located in a strategic location in the province of Arezzo, between Florence and Siena, and near Chianti, this farmhouse is surrounded by a scenic and peaceful countryside. The cooking courses by the ancient wood oven are fantastic.
